Here’s a warm and hearty Winter meal to try! Blending sweet and savoury, this is a delicious Moroccan style meal that works so well with Lamb.
 

Slow Cooker Moroccan Lamb Shanks

Makes 6 Serves
Prep Time 20 mins
Cook Time 5hrs 35mins

Ingredients –

1 tbs olive oil
6 lamb shanks small trimmed
1 brown onion finely chopped
2 carrots coarsely chopped peeled
3 garlic cloves crushed
2 tsp ground cumin
1 tsp ground turmeric
1 tsp sweet paprika
7 cm cinnamon stick
1L Chicken Style Liquid Stock
600 g sweet potato coarsely chopped peeled
400 g brown lentils drained rinsed
100 g pitted dried dates halved
3 cups couscous cooked
1 bunch fresh coriander

 

Method

  1. French trim the lamb so the bone is protruding. In a large frying pan, brown the lamb and transfer to a plate.
  2. Add onion, carrot and garlic to the pan and cook for 5 minutes.
  3. Add the cumin, turmeric, paprika and cinnamon and stir until aromatic.
  4. Place lamb, onion mixture, sweet potato, lentils and dates in the slow cooker. Add the stock. Cook covered on low for 5 hours.
  5. Uncover and cook on high for a further 30 minutes.
  6. Divide couscous among serving dishes. Top with the lamb and sauce. Sprinkle with coriander leaves to serve.

Tip

Try a Moroccan flavoured couscous and a can of tomatoes to add even more flavour, and even some chilli to add more heat!
