Here’s a delicious and healthy meal for 2 from our Dietitian Erin!

Quinoa is known to be much better than white rice because it contains a much higher amount of nutrients and is rich in both fiber and protein.

Poached Egg with Warm Zoodles & Quinoa

Serves 2

Ingredients – 

1.5 cups Cooked Quinoa 
1 Tbsp Olive Oil 
2 Average portions, approx 6g Garlic (peeled or unpeeled, fresh or frozen) 
2 Medium Zucchini (peeled or unpeeled, fresh or frozen) 
12 Cherry Tomatoes 
1 Tsp Oregano or Mixed Herbs 
2 Large Eggs  

Method – 

  1. Divide the cooked quinoa onto 2 plates. 
  2. Heat half the oil in a pan on medium heat. Sauté the garlic for 1-2 mins then add the zucchini noodles (zoodles), cook for another 3-4 mins stirring often. Towards the end of cooking, season with salt and pepper and herbs. Add the zoodles onto the plates. 
  3. In the same pan, heat the other half of the oil and cook the cherry tomatoes for 2-3 mins. Season with herbs, pepper and a little salt. Add to the quinoa and zoodles. 
  4. Meanwhile, poach eggs in a pot of water. 
  5. Once eggs are poached to your liking, serve on top of quinoa and zoodle mixture and season with chilli flakes and freshly ground black pepper.
