Quinoa is known to be much better than white rice because it contains a much higher amount of nutrients and is rich in both fiber and protein.

Poached Egg with Warm Zoodles & Quinoa
Serves 2
Ingredients –
1.5 cups Cooked Quinoa
1 Tbsp Olive Oil
2 Average portions, approx 6g Garlic (peeled or unpeeled, fresh or frozen)
2 Medium Zucchini (peeled or unpeeled, fresh or frozen)
12 Cherry Tomatoes
1 Tsp Oregano or Mixed Herbs
2 Large Eggs
Method –
- Divide the cooked quinoa onto 2 plates.
- Heat half the oil in a pan on medium heat. Sauté the garlic for 1-2 mins then add the zucchini noodles (zoodles), cook for another 3-4 mins stirring often. Towards the end of cooking, season with salt and pepper and herbs. Add the zoodles onto the plates.
- In the same pan, heat the other half of the oil and cook the cherry tomatoes for 2-3 mins. Season with herbs, pepper and a little salt. Add to the quinoa and zoodles.
- Meanwhile, poach eggs in a pot of water.
- Once eggs are poached to your liking, serve on top of quinoa and zoodle mixture and season with chilli flakes and freshly ground black pepper.
