Nothing screams morning tea on a Winter morning quite like spiced pumpkin muffins! This recipe has been shared with SPHC courtesy of Bev Milligan from QCQA Millaa Milla Branch and brought into the clinic by one of our lovely patients.

Serves: 12
Prep time: 20 minutes
Cook time: 20-25 minutes

Ingredients
¾ cup self-raising flour
½ teaspoon nutmeg
½ cup firm packed brown sugar
½ cup reduced fat milk
1 cup pumpkin, mashed and cooled
¾ cup wholemeal self-raising flour
½ teaspoon mixed spice
1 egg
¼ cup vegetable oil
½ cup sultanas

Method
Preheat oven to 180 degrees Celsius and line a 12 muffin tin with paper liners.
Sift flour and spices into a bowl and stir in sugar and sultanas.
Beat egg, milk and oil together. Add pumpkin to egg mixture and combine well with a whisk.
Add the dry ingredients to the wet ingredients and combine well.
Spoon mixture into muffin tray and bake for 20-25 minutes or until skew comes out clean.

Some tips from the CWA on making healthier choices when it comes to your food habits:

Check your portion size
A standard service of juice is only ½ a cup! Fresh fruit has more fibre and is more fulfilling.

Be aware of sugar in your drinks
Read your labels. No added sugar is best. Remember 4g = 1 teaspoon of sugar.

Get more fruit and veg into your meals
Use canned legumes (lentils, mixed beans) as a booster to meat in curries, and stews.

Sit Less Move More
Call a buddy and walk/swim/join a class together. It’s more fun when you can motivate each other.

Cook at home
Instead of going out, why not host a dinner. Pick a cuisine and everyone brings a different course.
