Inspired by the much-loved ANZAC biscuit, these light and fluffy homemade scones bring together all the classic flavours—oats, coconut and golden syrup—into a warm, comforting twist on a traditional favourite.
Anzac Day Scones

Ingredients
- 2 cups (300g) self-raising flour, sifted, plus extra, to dust
- ¾ cup (65g) desiccated coconut
- ¾ cup (65g) rolled oats
- 200ml pure cream
- 200ml milk
- 2 tbs golden syrup, plus extra to serve
- Whipped cream, to serve
Method
- Preheat the oven to 230°C/210°C fan-forced. Line 2 baking trays with baking paper.
- Place the sifted flour, coconut and oats and a pinch of fine salt in a large bowl. Add the cream, milk and syrup, and cut through the mixture with a butter knife to combine.
- Turn onto a generously floured surface and gently knead and pat out until 2-2.5cm thick. Use a floured 5.5cm round cookie cutter to cut out 12 scones and place on one prepared tray, 1cm apart. Press dough offcuts together and cut out remaining 9 rounds and place onto the remaining tray.
- Bake for 10 minutes, or until scones are golden on the bottom and top. Serve with whipped cream and extra golden syrup.
