Anzac biscuits are not only delicious, they are more importantly a symbol of remembrance, courage and unity.  

Here’s a great recipe to share with family and friends in the lead up to Anzac day.

Anzac Biscuits

Makes – 27s

Prep Time – 10 mins

Cooking Time – 20 mins

Ingredients –

1 cup plain flour
1 cup rolled oats
1 cup brown sugar
1/2 cup coconut
125 g butter
2 tbs golden syrup
1 tbs water
1/2 tsp bicarbonate of soda

 

Method

  1. Sift the flour into a bowl. Add the sugar, rolled oats and coconut.
  2. Melt the butter in a saucepan, then add golden syrup and water.
  3. Stir the bicarbonate of soda into the liquid mixture.
  4. Add the liquid to the dry ingredients and mix thoroughly.
  5. Place walnut-sized balls of mixture on a greased tray and bake at 175C for 15-20 minutes.

Note – Biscuits will harden as they cool. For crunchier biscuits, use more golden syrup and flatten slightly before cooking.

Gluten Free – The flour can be easily swapped for a gluten free flour, and while oats, in essence, are gluten free, sometimes they are contaminated by exposure to wheat. If you prefer to be on the safe side, you could swap oats for quinoa flakes or use half a cup of quinoa flakes and increase coconut by half a cup.
