These delicious Apricot balls will beat those mid afternoon sugar cravings and provide a healthy on the go energy boost for the whole family!  

Apricot Bliss Balls

Makes – 20 balls

Cooking Time – 40 mins

Ingredients –

2/3 cup (100g) raw cashews
1/2 cup (80g) almond kernels
140 grams (4½ ounces) chopped fresh medjool dates
3/4 cup (100g) chopped dried apricots
2 tablespoons white chia seeds
1 tablespoon linseeds (flaxseeds)
2 tablespoons water
2 tablespoons (12g) desiccated coconut

 

Method

  1. Process cashews and almond kernels until fine. Add dates, dried apricots, white chia seeds, linseeds (flaxseeds) and water, and process until well combined.
  2. Roll level tablespoons of mixture into balls. Roll balls lightly in coconut to coat, and place on a baking-paper-lined oven tray. Refrigerate for 1 hour. Transfer to an airtight container; store in the fridge for up to 1 month.

Note – Suitable to freeze. Not suitable to microwave.
