These delicious Apricot balls will beat those mid afternoon sugar cravings and provide a healthy on the go energy boost for the whole family!
Apricot Bliss Balls
Makes – 20 balls
Cooking Time – 40 mins
Ingredients –
2/3 cup (100g) raw cashews
1/2 cup (80g) almond kernels
140 grams (4½ ounces) chopped fresh medjool dates
3/4 cup (100g) chopped dried apricots
2 tablespoons white chia seeds
1 tablespoon linseeds (flaxseeds)
2 tablespoons water
2 tablespoons (12g) desiccated coconut
Method
- Process cashews and almond kernels until fine. Add dates, dried apricots, white chia seeds, linseeds (flaxseeds) and water, and process until well combined.
- Roll level tablespoons of mixture into balls. Roll balls lightly in coconut to coat, and place on a baking-paper-lined oven tray. Refrigerate for 1 hour. Transfer to an airtight container; store in the fridge for up to 1 month.
Note – Suitable to freeze. Not suitable to microwave.
