Overnight oats make for an easy, convenient and healthy breakfast on the go. This overnight oats recipe can be made in advance and lasts all week. Which means it can be made Sunday night for a convenient healthy breakfast for the whole week. You can easily add your favourite fruits, yogurts, seeds or other toppings to make a nutritional breakfast.

INGREDIENTS – BASE RECIPE

  •  ½ cup rolled oats

  •  ½ cup of milk of your choice (cow, almond, coconut)

  •  ¼ cup non-fat Greek yogurt

  •  1 tablespoon of chia seeds

  •  1 tablespoon of honey or maple syrup for sweetening

  •  ¼ teaspoon vanilla extract

METHOD
Step 1 – To make your overnight oats, simply add these ingredients to an old recycled jar, mason jar or bowl. Give the mixture a few stirs to make sure the oats have been fully immersed in the milk. Then, cover and leave in the refrigerator overnight to let the oats soften and flavours blend.
Step 2 – The next day, open and enjoy as is or garnish with desired toppings (see ideas below).

  •  Peanut butter and banana

  •  Sliced or baked apple and cinnamon

  •  Carrot cake -add in some finely shredded carrot, walnuts, and a chopped date

  •  Frozen mixed berries

  •  Fresh blueberries/ strawberries
