This salmon recipe is quick, easy and a wonderful addition to your Good Friday or Easter lunch that also makes an easy midweek dinner that always impresses. Plus, with the benefits of being rich in omega 3 fatty acids, a great source of protein and high in vitamin B this is a delicious meal that is packed with nutritional benefits.

For a convenient midweek meal, the marinade can easily be made ahead of time. Serve with a delicious warm autumn vegetable salad.

INGREDIENTS

  •  2 tablespoons brown sugar

  •  1 tablespoon soy sauce

  •  1 tablespoon butter, melted

  •  1 tablespoon olive oil

  •  1/2 teaspoon garlic powder

  •  1/2 teaspoon ground mustard

  •  1/2 teaspoon paprika

  •  1/2 teaspoon pepper

  •  1/4 teaspoon dill

  •  Dash salt

  •  Dash dried tarragon

  •  Dash cayenne pepper

  •  1-4 salmon fillet portions (200g each)

METHOD
Step 1 – Mix all of the ingredients together except for the salmon.
Step 2 – Prepare 1-2 sheets of aluminium foil for each portion of salmon.
Step 3 – Brush or pour mixed ingredients over the salmon and wrap in foil.
Step 4 – Place the salmon on a baking tray and bake at 180 degrees for 15-20 minutes until the salmon is falling apart when pulled with a fork.
